Hope everyone is having a great Monday so far! :) A little story about my family. I am married with 3 boys. Logan is 10, Hunter is 6, and Mason is 2. Mason is the only person that is Gluten Free. He has his own personal cabinet with his favorite snacks in it. I have found it to be easier to cook and freeze individual meals for him, so I need to do is warm them up in the microwave. Every now and then, he gets frustrated because he can not have the same things as his brothers. The hardest part is planning in advance if we will be out. Recipe of the day
Chicken Fingers
Ingredients:
3/4 of Gluten Free Bisquick
1/2 cup of grated Parmesan cheese
1 teaspoon paprika
1/2 teaspoon salt or garlic salt
3 boneless skinless chicken breasts (1 lb), cut crosswise into 1/2-inch strips
2 eggs, slightly beaten
3 tablespoons butter or margarine, melted
Directions:
1.Heat oven to 450°F. Line cookie sheet with foil; spray with cooking spray.
2.Stir Bisquick mix, cheese, paprika and salt in shallow baking dish. Dip chicken strips into eggs, then coat with Bisquick mixture; repeat dipping in eggs and Bisquick mixture. Place chicken on cookie sheet. Drizzle butter over chicken.
3.Bake 12 to 14 minutes, turning after 6 minutes, until no longer pink in center.
*This recipe will make 5 Chicken Fingers. You could easily double or triple the recipe and freeze them.*

Recipe of the day
Ingredients:
•4 cups Rice Chex® cereal (gluten free)
•1/3 cup granulated sugar
•1/3 cup packed brown sugar
•1/3 cup peanut butter
•1/4 cup butter or margarine, softened
•1 teaspoon vanilla
•1 egg, beaten
•2 cups miniature marshmallows
•1/4 cup miniature semisweet chocolate chips
•2 tablespoons coarsely chopped honey-roasted peanuts, if desired
•1 or 2 rolls Betty Crocker® Fruit Roll-Ups® chewy fruit snack (any red variety), unwrapped, torn into pieces
Preparation Instructions:
1.
Heat oven to 375°F. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet.
2.
In large bowl, mix sugars, peanut butter, butter, vanilla and egg. Stir in crushed cereal. Spread in ungreased 12-inch pizza pan.
3.
Bake 12 minutes. Sprinkle evenly with marshmallows to within 1 inch of edge. Bake 5 minutes longer or until marshmallows are light golden brown. Sprinkle chocolate chips, peanuts and fruit snack pieces over marshmallows to look like pizza toppings. Cool completely on cooling rack. Cut into 16 wedges. Store tightly covered.

Dealing with Birthday Parties etc..
Having a Gluten free child/children, doesn't mean that they have to miss out on all of the fun. I find that making a batch of gluten free cupcakes, frosting them and then freezing them in individual containers really works wonders. Whenever, you have a Birthday party, or special event, you will always be prepared, and have a special treat available for your Gluten free child/children.

Ingredients
Ingredients
- Vegetable oil
- 1/4 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 1 1/4 cups Bisquick Gluten free mix
- 1/4 cup packed brown sugar
- 1/4 teaspoon ground nutmeg
- 2 tablespoons butter, melted
- 1/3 cup buttermilk
- 1 egg, beaten
- In deep fryer or 2-quart heavy saucepan, heat 2 to 3 inches oil to 375 degrees. In shallow bowl, mix granulated sugar and cinnamon; set aside.
- In medium bowl, mix remaining ingredients until smooth. Shape dough into 1 1/4-inch balls. Carefully drop balls, 5 or 6 at a time, into hot oil. Fry about 1 to 2 minutes or until golden brown on all sides; drain on paper towels. Immediately roll in cinnamon-sugar.

Kind Bars
My husband and I recently purchased Kind Bars, and they are so good!! There are many different types to choose from. I personally loved the Dark chocolate cherry and cashew + antioxidants , while my Husband prefers the Peanut butter dark chocolate + protein. My 2 yr old son who is gluten free loves the Mango macadamia + calcium. My personal opinion is these bars taste better than a candy bar, and have some great nutritional value. There are reasonably priced, and sometimes we are able to find them on sale for $1.00 a piece. Check them out here: http://www.kindsnacks.com/

The challenges of being gluten free
I remember how overwhelmed I felt the first time going grocery shopping for gluten free products. The selection of gluten free products have really grown, but to me there still isn't enough, especially for children. The cost of some of these products are outrageous. I have found that making my own bread for my son, seems to be the best tasting, and also the most cost effective. hopefully, one day soon there will be a gluten free grocery store. For now, I am lucky to have a grocery store about 20 minutes away from me, that has an organic/gluten free section. I go there twice a month, and stock up for what I will need for the month for my son (Mason).

I am starting this blog, to help other parents find kid-friendly products for their child/children, who have a gluten allergy or a gluten intolerance. As a mother of a 2 year old son, who can not have gluten, I know how hard it is to find great tasting products. Within a month or two, I would like to start writing different fast food companies, and requesting them to start making some gluten free products. It is very hard to know that my child can not have Mcdonalds or Burger King every now and then. I have also learned which foods and brands are good tasting brands, so in the future I will be sharing those with all of you!
