Snickerdoodle Chex Mix Recipe Ingredients: •1/4 cup sugar •1 teaspoon ground cinnamon •2 cups Cinnamon Chex® cereal •2 cups Chocolate Chex® cereal •4 cups popped popcorn •1/4 cup butter or margarine Directions: 1.In small bowl, mix sugar and cinnamon; set aside. In large microwavable bowl, mix cereals and popcorn. 2.In 1-cup microwavable measuring cup, microwave butter uncovered on High about 40 seconds or until melted. Pour over cereal mixture, stirring until evenly coated. 3.Microwave uncovered on High 2 minutes, stirring after 1 minute. Sprinkle half of the sugar mixture evenly over cereal mixture; stir. Sprinkle with remaining sugar mixture; stir. Microwave 1 minute longer. Spread on waxed paper or paper towels to cool. Store in airtight container.

~Gluten-Free Snickerdoodle Cookies~ **Recipe Of The Day**

~Gluten-Free Snickerdoodle Cookies~ Ingredients: ~2 eggs ~1 1/4 cups sugar ~1/4 cup butter, softened ~1/4 cup shortening ~2 teaspoons ground cinnamon ~2 cups Bisquick® Gluten Free mix Directions: 1.Heat oven to 375°F. In large bowl, mix eggs, 1 cup of the sugar, the butter and shortening. Stir in Bisquick mix until dough forms. 2.In small bowl, mix remaining 1/4 cup sugar and the cinnamon. Shape dough into 1 1/4-inch balls. (If dough feels too soft for shaping into balls, put dough in freezer for 10 to 15 minutes.) Roll balls in sugar-cinnamon mixture; place 2 inches apart on ungreased cookie sheets. 3.Bake 10 to 12 minutes or until set. Immediately remove from cookie sheets to cooling racks. *Makes 30 Cookies*

~Chicken Pot Pie~ *Recipe Of The Day*

Ingredients: -2 tablespoons butter or margarine -1 medium onion, chopped -1 bag (12 oz) Green Giant® Valley Fresh Steamers™ frozen mixed vegetables -1 1/2 cups cut-up cooked chicken -1 3/4 cups Progresso® chicken broth -1 teaspoon seasoned salt -1/2 teaspoon dried thyme -3/4 cup milk -3 tablespoons cornstarch Topping: -3/4 cup Bisquick® Gluten Free mix -1/2 cup milk -1 egg -2 tablespoons melted butter or margarine -1 tablespoon chopped fresh parsley Directions: 1.Heat oven to 350ºF. In 3-quart saucepan, melt butter over medium heat. Add onion; cook, stirring frequently, until tender. Stir in vegetables, chicken, chicken broth, salt and thyme; heat to boiling. In small bowl, mix 3/4 cup milk and the cornstarch with wire whisk until smooth; stir into chicken mixture. Heat just to boiling. Pour into ungreased 2-quart casserole. 2.In small bowl, stir all topping ingredients except parsley with fork until blended. Drop topping mixture by small spoonfuls over chicken mixture. Sprinkle with parsley. 3.Bake 25 to 30 minutes or until toothpick inserted in center of topping comes out clean. *Makes 6 Servings*

*~Super easy Blueberry Dessert*~ Recipe of the Day!!

Easy Blueberry dessert Ingredients: ~2 cups fresh or frozen (thawed) blueberries ~2–3 tablespoons agave nectar (or sugar) depending on the sweetness of your berries ~1 and 1/4 cup heavy whipping cream Directions: 1.Save 4 berries for garnish and place the rest along with the agave (or sugar) in a blender or food processor, puree the berries until smooth. 2.Whip the cream until stiff peaks form. Reserve some of the whipped cream for garnish and fold the puree into the rest until almost all the streaks are gone. 3.Spoon into 4 serving dishes. Garnish with reserved cream and berries. Serve immediately or it can be kept for up to half an hour or so in the fridge. *Makes 4 servings*

Gluten-Free Pizza Ingredients: 1 1/3 cups Bisquick® Gluten Free mix 1/2 teaspoon Italian seasoning or dried basil 1/2 cup water 2 eggs, beaten 1/3 cup oil Suggested Topping Quantities: 1 can (8 oz) pizza sauce 1 cup bite-size pieces favorite meat or vegetables 1 1/2 cups shredded mozzarella cheese (6 oz) Directions: 1.Heat oven to 425°F. Grease 12-inch pizza pan. Stir Bisquick mix, Italian seasoning, water, oil and eggs until well combined; spread in pan. 2.Bake 15 minutes (crust will appear cracked). 3.Spread pizza sauce over crust; top with meat and cheese. 4.Bake 10 to15 minutes longer or until cheese is melted. *Makes 6 servings!*

Microwave about 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag. 3.Add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper to cool. Store in airtight container in refrigerator.

***Gluten-Free Rice Krispy Treats*** Ingredients: ~3 tablespoons butter or margarine ~1 package (10 oz., about 40)regular marshmallows OR ~4 cups miniature marshmallows ~6 cups Kellogg's® Rice Krispies® Gluten Free cereal Directions: 1. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat. 2. Add KELLOGG’S RICE KRISPIES Gluten Free cereal. Stir until well coated. 3. **Strawberry Shortcake** Recipe of the day!

Strawberry Shortcake Ingredients: 4 cups (1 qt) strawberries, sliced 1/2 cup sugar 2 1/3 cups Bisquick® Gluten Free mix 1/3 cup butter or margarine 3/4 cup milk 3 eggs, beaten 1/2 teaspoon vanilla 3/4 cup whipping cream, whipped Directions: 1.In small bowl, mix strawberries and 1/4 cup sugar; set aside. 2.Heat oven to 425°F. Grease cookie sheet. In medium bowl, combine Bisquick mix and remaining 1/4 cup of the sugar; cut in butter with pastry blender or fork. Stir in milk, eggs and vanilla. Drop by 6 spoonfuls onto cookie sheet. 3.Bake 10 to 12 minutes or until light golden brown. Cool 5 minutes. With serrated knife, split shortcakes; fill and top with strawberries and whipped cream. *Makes 6 servings*

~*Gluten-Free Meatloaf*~ Recipe of the day! Ingredients: •2 pounds ground beef •2 large eggs •2 ounces applesauce •1 cup gluten-free cracker crumbs or gluten-free bread crumbs •1 medium chopped onion •1/4 cup chopped green pepper •2 teaspoons gluten-free Worcestershire sauce •1 cup gluten-free ketchup Directions: 1.Preheat oven to 400° F 2.Combine all ingredients in a large mixing bowl. Use your hands to thoroughly blend the mixture. I like to use disposable gloves for this job! Add a small amount of milk or water if necessary to make the mixture moist. 3.Use a large spatula to turn the meat mixture into a 9x5x3-inch loaf pan. Press down and smooth the top. 4.Bake in preheated oven for 30 minutes and carefully remove pan and pour off excess fat. Spread ketchup over the top of loaf, return to oven and bake for an additional 30 minutes. Again, carefully pour off excess fat and serve warm. ~Makes 6-8 servings **Always make sure your work surfaces, utensils, pans and tools are free of gluten. Always read product labels. Manufacturers can change product formulations without notice. When in doubt, do not buy or use a product before contacting the manufacturer for verification that the product is free of gluten.**

For a quick and easy breakfast, I like to make a couple of bacthes of waffles up, divide them, and then freeze them! When you need something fast, just take a bag out of the freezer, and warm-up!

*~Gluten-Free Twinkies~* Ingredients: 3 eggs,separated 1/4 cup grapeseed oil 1/4 cup agave nectar 1 tablespoon vanilla extract 1 tablespoon lemon juice 6 tablespoons coconut flour 1/2 teaspoon baking soda 1/4 teaspoon sea salt Directions: 1.In a large bowl, whip egg whites to stiff peaks, then set aside 2.In a medium bowl, whip egg yolks until pale yellow, then whip in grapeseed oil and agave 3.Whip vanilla and lemon juice into egg yolk mixture 4.In a medium bowl combine coconut flour, baking soda and salt 5.Blend flour mixture into egg yolk mixture, then whip ingredients together until smooth 6.Gently fold egg whites into yolk-flour mixture 7.Spoon batter into Twinkie molds until they are half full (you will get 8 Twinkies) 8.Bake at 350° for 11-12 minutes 9.Remove from oven and allow Twinkies to cool *This recipe will make 8 Twinkies. You could probably freeze these. Gluten-Free Twinkie Filling 1/2 cup of whipped cream 1/4cup agave nectar Directions: 1.Whip whipped cream to stiff peaks 2.Blend in agave and re-whip until stiff peaks form again 3.Place filling in Twinkie filling injector 4.Place cooled Twinkie flat side up and inject filling into Twinkie in 3 spots on its flat (bottom) side 5.Enjoy!
